When I first tasted wine, I was around 10 years old. My parents were with me, as was Bruce, a friend from my family. Bruce is one those people who seems larger than life. Bruce is a large, bald, irreverent man who enjoys nothing more than a good laugh and a glass or two of wine. What did Bruce and his wife do with me when I was 19? We enjoyed good food and good wine. How do you choose the right varietal to make them happy? Concentrate on the food!
TRADITIONAL WINE PARTING SUGGESTIONS
A glass of white wine is the best pairing for entrees such as fish and chicken. Chardonnay is known for its rich oaky flavors and crisp flavor. It’s a great match for hardy herbs like ‘Rosemary Garlic Herb Chicken’ or ‘Alaskan Cod With Grape Tomato Vinaigrette’. The more delicate Pinot Grgio is more easily recognized because it has a lighter, more refreshing flavor and goes well with dishes that feature a savory sauce. The lemon in “Charred Lemon Chicken Piccata” or the pesto (or, as my husband calls them, “pesto besto”) are ideal matches.

CARVING STATION WINE PARTING IDEAS
Let’s look at red wines for your carving stations which are dominated by red meats. Cabernet Sauvignon is medium-bodied with moderate to high acidity. It pairs well with creamed horseradish, which is featured in the ‘Roast Beef Au Jus” and the ‘Slow Roasted Prim Rib of Beef Au Jus. Merlot, which has a softer, smoother and lower acidity than Cabernet Sauvignon, pairs well with the sweetness from the ‘Pineapple Glaze,’ for Pit Ham, as well as the Herb flavors on Beef Tenderloin,’ (my personal favorite!)
